My favorite Potato Soup Recipe

4 cups veggie broth
2 cups milk
1/2 half and half
3 cans of diced potatoes
1/4 cup minced onion

1/4 cup shredded carrots
1/4 diced celery
1/2 teaspoon seasoning salt
1/4 teaspoon  pepper
1 (8 ounce) package cream cheese, cut into chunks

1/4 cup potato flakes (instant potatoes)
1/2 cup sour cream
Sliced green onion
Shredded Cheddar Cheese

In a stock pot, saute onions, garlic, and carrots until tender. Combine broth, potatoes, saute mixture, and spices  Boil on medium heat until heat through.  Smash a few of the potatoes to release their starch for thickening.  Add milk and half and half. Reduce to low heat. Add cream cheese and sour cream.  Slowly add instant potatoes until soup is thickened.  Serve soup topped with sliced green onions and cheddar cheese! Enjoy~
