Today is awesome in Kansas City! It is 9:30 am and already 57 degrees! I love, love, love it! Spring cleaning is in my veins and, after going grocery shopping yesterday, my "food" mood has changed from soups and roasted vegetables to light pasta dishes, or just desperately wanting to grill out.
One of my favorite spring/summer recipes to break out for a light lunch or easy side dish to a BBQ is Couscous Salad. You can serve it cold, it doesn't have to stay refrigerated, and the longer it sets the better it gets!
* Couscous – 1.5 cups
* English Cucumber, diced
* Cherry Tomato, diced
* Red Onion, diced
* Feta Cheese, crumbled
* Parsley (chopped) – 3 tablespoons
* Lemon juice – 1 tablespoon
* Sauce fiery red pepper – 1 / 2 teaspoon
* Salt and black pepper – to taste.
Prepare couscous as instructed on package. When ready, fluff with fork. Add the remaining ingredients and season to taste and mix thoroughly. Transfer to another large plate. Serve cold.
You better believe I am making this today!
